Seafood Supreme
- 1/2 c. chopped onion
- 5 small cloves garlic, minced
- 2 tsp. salt
- 1 tsp. black pepper
- 3 c. cooked rice
- 1 stick oleo
- 1 c. lump crabmeat
- 1 can mushroom soup
- 2/3 c. chopped bell pepper
- 1 c. diced celery
- 1/2 tsp. red pepper
- bread crumbs
- 1/2 c. pimento (optional)
- 4 sprigs minced parsley
- 1 c. cooked shrimp or saute with onion mixture (if raw)
- Saute onion, pepper, garlic, celery and parsley in oleo.
- Add salt, red and black pepper until blended.
- Add soup; stir well. Fold in crabmeat, shrimp and rice.
- Spoon into greased casserole. Dot with oleo and sprinkle bread crumbs on top.
- Bake twenty minutes at 400u0b0.
- Crabmeat may be omitted and use 2 cups shrimp instead.
