Spinach, Bacon And Feta Breakfast Sandwich
- 2 Large Eggs
- Salt And Pepper, to taste
- 1/4 cups Crumbled Feta Cheese, Divided
- 1 Tablespoon Olive Oil
- 2 cups Fresh Baby Spinach
- 2 Bagel Thins (or Regular Bagels) Sliced And Toasted
- 4 slices Bacon, Cooked And Drained
- Preheat oven to 375u0b0F. Lightly grease 2 mini pie pan wells or 2 jumbo muffin wells with nonstick cooking spray.
- Crack one egg into each well. Sprinkle with salt and pepper. Lightly whisk to combine. Sprinkle feta cheese on top of egg mixture.
- Bake for 8-10 minutes, or until eggs are set. Remove from oven and let cool slightly.
- While eggs are baking, heat olive oil in a medium skillet. Add spinach and saute until wilted. Remove from heat and set aside.
- To assemble breakfast sandwiches, divide spinach evenly between bagels. Top each bagel with the baked eggs, and two slices of bacon.
- Serve immediately, refrigerate, or freeze until ready to serve. Enjoy!
