Raspberry Oatmeal Squares
- 1/2 cups Butter, Softened
- 1 cup Brown Sugar
- 1 whole Egg
- 1 teaspoon Vanilla
- 1-1/4 cup Flour
- 1/2 teaspoons Baking Soda
- 1/4 teaspoons Salt
- 2 cups Old Fashioned Oats, Divided
- 1 cup Raspberry Jam Or Preserves
- Preheat oven to 350 degrees. Grease a 9x9 pan.
- Cream butter and sugar until light and fluffy. Add egg and vanilla and continue beating until combined.
- In a separate mixing bowl, combine flour, baking soda and salt. Add to the creamed butter mixture and mix until well combined. Stir in 1 3/4 cups of oats.
- Press 2/3 of the dough into the bottom on the 9x9 pan. Spread raspberry jam over the oatmeal base. Add 1/4 cup of oats to the remaining dough. Crumble mixture evenly over the top of the raspberry jam.
- Bake for 25 to 30 minutes or until golden brown. Cut into squares when cool. Store leftovers in refrigerator.
