Peach Strawberry Mini Muffins

  1. Note: Recipe involves pureeing or blending the peaches and strawberries. If you prefer chopped fruit in the muffins, fold them into the batter before baking.
  2. Puree fruit (if not using chopped) in food processor. Add butter and sugar. Blend. Add banana. Blend.
  3. Dissolve cornstarch in milk. Add milk mixture and vanilla to food processor. Blend.
  4. Add flour, baking powder and salt. Blend. (If you choose to use chopped rather than blended fruit, fold in the fruit now.)
  5. Fill muffin tins. Bake at 375u0b0F for 25-30 minutes.
