Ruz Lahmeh Snubar (Rice With Meat And Pine Nuts)
- 2 cups Rice
- 3 cups Light Beef Broth
- 2 Tablespoons Butter
- 1/2 cups Pine Nuts
- 2 Tablespoons Olive Oil
- 1 whole Medium Onion, Diced
- 1-1/2 pound Ground Beef
- 2 Tablespoons Ground Cinnamon
- 1 Tablespoon Cumin
- Place rice in a saucepan and cover with 3 cups of light beef broth or water. Bring to a boil and steam until done.
- Meanwhile, allow butter to melt in a large skillet. Brown pine nuts over medium-high heat until they are brown to golden brown, but not burnt. Pine nuts burn fast, so don't leave them unattended! Set aside browned pine nuts.
- Pour in 2 tablespoons olive oil and brown 1 medium onion, diced. Once this is browned, set aside.
- Place ground beef into the skillet, in small chunks. Brown the meat until it is well done and there are no pink pieces.
- Once the rice is done, add it to the meat in the skillet. Add the toasted pine nuts and browned onion pieces. Stir it all together in the skillet and add spices.
- Serve with any appropriate dish or Mediterranean salad.
