Bean Soup With Sausage And Kale
- 1 whole Medium Onion, Chopped
- 2 cloves Garlic, Minced
- 1 Tablespoon Oil
- 1 can Black Beans, Rinsed And Drained
- 1 can Cannellini Beans, Rinsed And Drained
- 2 cans Chicken Broth, 14 1/2 Oz Each
- 1 cup Tomatoes, Chopped
- 1/2 teaspoons Dried Marjoram
- 12 ounces, weight Italian Sausage, Cooked And Cut Into 1/2 Inch Slices
- 7-1/2 cups Kale, Rinsed And Chopped (or Spinach)
- Pepper
- In large pot, cook onion and garlic in hot oil for about 5 minutes, or until onion is tender. Stir in beans, broth, tomatoes and marjoram. Bring to a boil, reduce heat. Simmer covered for 15 minutes.
- Stir in sausage and greens. Simmer for 5 minutes until greens are tender. Season with pepper if needed.
- Note: You can also buy the uncooked sausage and cook it prior to making the recipe.
