Rice Salad
- FOR THE DRESSING:
- 3 Tablespoons Red Wine Vinegar
- 1 Tablespoon Dark Sesame Oil
- 2 teaspoons Finely Grated Ginger
- 1 teaspoon Soy Sauce
- 1/4 teaspoons Salt
- 1/4 teaspoons Pepper
- FOR THE RICE SALAD:
- 2/3 cups Wild Rice (i Use The Pre-cooked From Trader Joe's, The Whole Package)
- 1 teaspoon Dark Sesame Oil
- 1 teaspoon Soy Sauce
- 1-1/2 cup Shredded Cooked Chicken (I Grill Mine And Just Cut It Into Small Pieces)
- 1 cup Snow Peas Cut Up
- 1/2 cups Sweet Red Pepper, Chopped
- 1/3 cups Scallion, Sliced
- 1/3 cups Currants, Dried
- 1. Mix dressing ingredients. Set aside.
- 2. Cook rice with oil and soy sauce (or just add the oil and soy sauce to pre-cooked rice).
- 3. Let everything cool.
- 4. Combine salad ingredients together.
- 5. Mix in dressing.
