Easy Vietnamese Chicken Cabbage Salad-Goi Ga
- 3 Tablespoons Lime Juice
- 2 Tablespoons Fish Sauce
- 3 Tablespoons Red Wine Vinegar
- 1 Tablespoon Sugar
- 1/2 teaspoons White Pepper
- 3/4 cups Thinly Sliced Red Onion
- 3 cups Coarsely Chopped Napa Cabbage
- 1/2 cups Coarsely Chopped Fresh Mint
- 3/4 cups Shredded Carrots
- 3 cups Cooked And Cooled Shredded Chicken
- 3 Tablespoons Coarsely Chopped Roasted Salted Peanuts
- Combine lime juice, fish sauce, vinegar, sugar and pepper in a large bowl. Stir well to dissolve the sugar. Add sliced onions and toss to coat. Set aside to "marinate" for approximately 25 minutes.
- Coarsely chop cabbage and mint. Add cabbage, mint, carrots and chicken to the bowl of marinated onions and toss to coat everything well. Mound salad on plate and top with peanuts. Serve immediately.
