Chinese Vegetable Pizza
- 2 yellow squash
- 2 zucchini
- 1 green bell pepper
- 1 red bell pepper
- 1 large onion
- 8 cloves of garlic
- 5 Tbsp. soy sauce
- 1/2 tsp. black pepper
- 4 pieces flat bread, round 6 inch size
- 1/2 cup parmesan cheese
- 6-8 oz. sliced mozzarella cheese
- Wash all veggies.
- Cut squash, zucchini, and peppers into thin slices.
- Quarter garlic.
- Cut onion into thin stringy slices.
- Mix all veggies well, add 5 Tbsp. soy sauce, garlic and black pepper, mix again.
- Place veggies in lightly sprayed grilling basket.
- Cook on BBQ grill for 15 minutes or until veggies get tender.
- Heat oven to 375F.
- Place bread on baking sheet, place veggies on top of bread in equal amounts.
- Sprinkle with mozzarella cheese and dust with parmesan cheese.
- Bake for 10-12 minutes or until cheese has melted.
- Can be served with Jalapeno Soy Dip.
