Pineapple Chocolate Cake
- 1/2 pounds Butter, Room Temperature Soft
- 1 cup Sugar
- 1 whole Egg Well Beaten
- 2 cups Flour
- 2 teaspoons Vanilla
- 2 ounces, weight Semi Sweet Chocolate Melted
- FOR FILLING:
- 2 cans Pineapple, Crushed And Drained
- 4 Tablespoons Flour
- 2 whole Egg Yolks
- 1 cup Sugar
- Combine the first 6 ingredients into a bowl and crumble with hands till mixed thoroughly.
- Spread this batter-come-dough on the bottom of a 2-quart Pyrex rectangular baking dish, reserving approximately 1/2 cup of dough for garnish.
- Combine the filling ingredients and place on top of the batter. With the remaining dough, break off pieces and roll into strings, decorating the top in x's or lines.
- Bake for 55 minutes to 1 hour at 350 F.
