Herb Potato Rolls(Makes 36)

  1. Prepare 1/2 cup mashed potatoes.
  2. Pour warm water into a large bowl.
  3. Sprinkle yeast over water; add sugar and salt, stirring with wooden spoon until completely dissolved.
  4. Let stand.
  5. Add eggs, margarine, potatoes, 3 cups flour, oregano and sweet basil; mix until smooth.
  6. Add rest of flour and mix until dough is smooth.
  7. Knead for 8 to 10 minutes.
  8. Place dough in greased bowl; brush with melted margarine.
  9. Cover and let raise in warm place for 1 1/2 hours.
  10. Punch down and let raise again.
  11. Knead dough lightly, shape and place on greased cookie sheet.
  12. Cover and let rise until double (approximately 1 hour).
  13. Brush with egg and sprinkle with sesame seed.
  14. Bake at 350u0b0 for 15 minutes.
