Hoppin’ John Salad
- FOR THE SALAD:
- 2 cans Black Eyed Peas, Drained Well
- 1 cup Cooked And Cold White Rice Or Basmati
- 1/2 cups Chopped Red Onion
- 1 whole Jalapeno Pepper, Chopped
- 1 whole Green Or Red Bell Pepper, Chopped
- 1 whole Avocado, Cubed
- 1 clove Garlic, Minced
- FOR THE DRESSING:
- 1-1/2 Tablespoon Honey
- 1/2 Tablespoons Szechuan Sauce
- 3/4 Tablespoons Red Wine Vinegar, To Taste
- 1/4 cups Olive Oil
- 2 Tablespoons Lemon Juice
- Drain black eyed peas and then combine the salad ingredients in a mixing bowl.
- Combine dressing ingredients in a mixing bowl. Whisk it up and adjust to your taste. If you like it sweeter, add a little honey; if not add, a little more red wine vinegar.
- Toss it all together with the salad. It's even better the next day after being in the fridge, when all the dressing is sopped up!
