Hoppin’ John Salad

  1. Drain black eyed peas and then combine the salad ingredients in a mixing bowl.
  2. Combine dressing ingredients in a mixing bowl. Whisk it up and adjust to your taste. If you like it sweeter, add a little honey; if not add, a little more red wine vinegar.
  3. Toss it all together with the salad. It's even better the next day after being in the fridge, when all the dressing is sopped up!
