Mini Zucchini Banana Bread Loaves
- 1 cup Whole Wheat Pastry Flour
- 1 cup Oat Flour
- 3/4 cups Splenda Or Sugar
- 1-1/2 teaspoon Baking Soda
- 1/2 teaspoons Baking Powder
- 1/2 teaspoons Salt
- 1 teaspoon Cinnamon
- 1 whole Large Egg
- 1/2 cups Plain Yogurt
- 1/4 cups Canola Oil
- 1 cup Very Ripe Mashed Banana
- 1 cup Shredded Zucchini
- 1/2 teaspoons Vanilla
- 1/2 teaspoons Banana Extract
- 1/2 cups Mini Chocolate Chips
- Preheat oven to 325 degrees. Spray three mini-loaf pans (5 3/4" x 3" x 2") with cooking spray.
- Whisk together the first seven (dry) ingredients in a large mixing bowl.
- Whisk together the next seven (wet) ingredients in another bowl.
- Add the wet ingredients to the dry ingredients, stirring just enough to incorporate all ingredients. Do not over mix.
- Stir in the chocolate chips.
- Distribute batter between loaf pans. Bake in preheated oven for 40 to 45 minutes, until toothpick inserted in center comes out clean.
- Cool on a rack for 10 minutes before removing loaves from pans to cool completely on a rack.
