Mini Zucchini Banana Bread Loaves

  1. Preheat oven to 325 degrees. Spray three mini-loaf pans (5 3/4" x 3" x 2") with cooking spray.
  2. Whisk together the first seven (dry) ingredients in a large mixing bowl.
  3. Whisk together the next seven (wet) ingredients in another bowl.
  4. Add the wet ingredients to the dry ingredients, stirring just enough to incorporate all ingredients. Do not over mix.
  5. Stir in the chocolate chips.
  6. Distribute batter between loaf pans. Bake in preheated oven for 40 to 45 minutes, until toothpick inserted in center comes out clean.
  7. Cool on a rack for 10 minutes before removing loaves from pans to cool completely on a rack.
