Oriental Chicken Salad With Sesame Dressing
- 4 whole Chicken Breasts, Boneless, Cooked And Diced (approximately 4 Cups)
- 1 cup To 2 Cups Chow Mein Noodles
- 1/2 cups To 1 Cup Peanuts, Roasted
- 1/2 whole Sweet Red Pepper, Diced
- 1 whole Head To 2 Heads Of Lettuce, Torn Or Shredded (Or Equal Amount Of Mixed Greens)
- 1 can Mandarin Oranges (15 Oz)
- FOR SESAME DRESSING:
- 6 Tablespoons Sesame Oil
- 1/4 cups Rice Wine Vinegar
- 1/4 cups Soy Sauce
- 3 Tablespoons Sugar
- Whisk all dressing ingredients together. Cover and store in the refrigerator.
- In a large bowl, toss chicken, noodles, peanuts, pepper, and greens together. Divide among four plates.
- Top with oranges. Serve with sesame dressing and a roll.
- (Pack dressing and oranges separately from salad if you are taking it to a picnic, or if you want leftovers.)
