Jambalaya
- 1 large onion
- 2 green peppers
- 3 cloves chopped garlic
- 4 stalks celery, chopped
- 6 green onions
- 1 (28 oz.) can tomatoes
- 3 1/2 c. chicken broth
- 1/2 lb. smoked sausage
- 1 c. chopped ham
- 1 1/2 lb. pork spareribs
- 2 Tbsp. parsley leaves
- 2 tsp. Tabasco sauce
- 1/4 c. Worcestershire sauce
- 2 tsp. thyme
- 2 c. converted rice (uncooked)
- Saute vegetables in large pot.
- Squish up tomatoes and add with chicken broth.
- Simmer 1 hour.
- Brown smoked sausage and spareribs.
- Add along with ham to vegetable mixture.
- Add remaining ingredients except rice and simmer 20 to 30 minutes. Add rice and simmer 25 more minutes.
