Cranberry Oat Bars

  1. Preheat oven to 350F.
  2. Add cranberries and orange juice in bowl and microwave for 40 seconds and then set it aside to rest.
  3. Mix flour, oats, baking powder and salt in large bowl. Set aside.
  4. In a mixing bowl add butter and brown sugar. Beat until fluffy. Add 1 egg at a time and beat until creamy. Now add flour/oat mixture a little at a time and beat on low speed until blended well. Add cinnamon, cranberry mixture, white chocolate chips, and nuts and mix slowly with mixer or stir by hand.
  5. Spread the mixture into a 9x13 baking pan (I like Pampered Chef stone pans). Bake for 25-30 minutes until top is lightly browned and middle is set.
