Cranberry Oat Bars
- 1 cup Dried Cranberries
- 1/4 cups Orange Juice
- 1-1/2 cup Flour
- 1-1/2 cup Oats
- 1 teaspoon Baking Powder
- 1/4 teaspoons Salt
- 1-1/2 stick Butter
- 1-1/2 cup Brown Sugar
- 2 whole Eggs
- 1 teaspoon Cinnamon
- 1 cup White Chocolate Chips
- 1/2 cups Chopped Walnuts Or Pecans
- Preheat oven to 350F.
- Add cranberries and orange juice in bowl and microwave for 40 seconds and then set it aside to rest.
- Mix flour, oats, baking powder and salt in large bowl. Set aside.
- In a mixing bowl add butter and brown sugar. Beat until fluffy. Add 1 egg at a time and beat until creamy. Now add flour/oat mixture a little at a time and beat on low speed until blended well. Add cinnamon, cranberry mixture, white chocolate chips, and nuts and mix slowly with mixer or stir by hand.
- Spread the mixture into a 9x13 baking pan (I like Pampered Chef stone pans). Bake for 25-30 minutes until top is lightly browned and middle is set.
