Chicken Salad
- 3/4 cups Mayonnaise
- 2 Tablespoons Olive Oil
- 2 Tablespoons Tarragon Vinegar
- 1 Tablespoon Honey Dijon Mustard
- 1/2 whole Shredded Rotisserie Chicken
- 1/2 whole Diced Green Apple
- 1 cup Diced Red Seeded Grapes
- 3/4 cups Diced Walnuts
- 3 teaspoons Dried Tarragon Leaves
- 2 teaspoons Sea Salt
- 2 teaspoons Cracked Black Pepper
- In a large mixing bowl, combine the mayonnaise, oil, vinegar, and the mustard. Mix these ingredients well.
- Add the chicken, apples, grapes, walnuts and the spices and stir all the ingredients together. Taste test to see if you need to add a little more salt or pepper.
- Either serve as a sandwich or as a dip with some crackers. Garnish with extra tarragon leaves.
