Almond French Toast Strips With Mixed Berry Fool
- 2 whole Eggs, Beaten
- 1/2 teaspoons Pure Almond Extract
- 4 slices Your Favorite Bread, Crust Removed
- 4 ounces, weight Cool Whip Topping, At Room Temperature
- 1 cup Frozen Mixed Berries
- 2 Tablespoons Granulated Sugar
- Preheat oven to 400u0b0F. Prepare a large rimmed baking sheet pan with cooking spray and set aside.
- In a shallow bowl, add beaten eggs and almond extract. Whisk to combine. Dip each crustless slice of bread into egg mixture, coating both sides, and place on prepared baking sheet pan. Place in the oven and bake 8-10 minutes or until golden brown.
- In a mixing bowl, add whipped topping.
- In a small saucepan over medium high heat, add frozen mixed berries and sugar. As soon as fruit begins to break down, remove from heat. Allow to cool. Fold into the whipped topping.
- Cut each slice of French toast into 4 strips and top with mixed berry fool.
