Protein Packed Super Fudgy Brownies
- 30 ounces, weight Canned Black Beans, Drained
- 4 whole Eggs, Beaten
- 1 cup Oil (cocount, Grapeseed, Or Canola)
- 1 cup Sugar
- 3/4 cups Cocoa Powder
- 1 teaspoon Baking Soda
- 1 cup Smooth Peanut Butter
- 1/2 cups Semi-sweet Morsels
- Note: make sure that the beans are unseasoned!
- In a blender, puree the black beans. Add the eggs. Add the oil.
- In a bowl, mix the sugar, cocoa powder, and baking soda.
- Add the bean mixture to the dry mixture and blend. This is a wet batter.
- All of this can be done in one bowl with a stick blender.
- Pour into a 9 x 13 baking dish and bake for 30-45 minutes at 350 degrees. It usually takes about 35 minutes, but these will overcook quickly! Remove from the oven when the center is *just* set.
- Meanwhile, microwave the peanut butter. Add the chocolate morsels. Frost the warm brownies. Enjoy!
- Variation: add morsels to the batter.
- For a non-gluten free version, a couple of tablespoons of flour does provide a little lift.
