Protein Packed Super Fudgy Brownies

  1. Note: make sure that the beans are unseasoned!
  2. In a blender, puree the black beans. Add the eggs. Add the oil.
  3. In a bowl, mix the sugar, cocoa powder, and baking soda.
  4. Add the bean mixture to the dry mixture and blend. This is a wet batter.
  5. All of this can be done in one bowl with a stick blender.
  6. Pour into a 9 x 13 baking dish and bake for 30-45 minutes at 350 degrees. It usually takes about 35 minutes, but these will overcook quickly! Remove from the oven when the center is *just* set.
  7. Meanwhile, microwave the peanut butter. Add the chocolate morsels. Frost the warm brownies. Enjoy!
  8. Variation: add morsels to the batter.
  9. For a non-gluten free version, a couple of tablespoons of flour does provide a little lift.
