Lemon Squares
- 1 c. butter or oleo
- 1/2 c. powdered sugar
- 2 c. all-purpose flour
- pinch of salt
- 4 eggs
- 2 c. granulated sugar
- 6 Tbsp. all-purpose flour
- 6 Tbsp. freshly squeezed lemons
- 1 Tbsp. grated lemon rind
- powdered sugar
- Combine butter, powdered sugar, 2 cups flour and salt.
- Mix well with pastry blender until mixture is well blended.
- Pat evenly into 15 x 10-inch jelly roll pan and bake at 350u0b0 for 20 minutes.
- Beat eggs slightly.
- Stir in granulated sugar,
- flour, lemon juice and grated lemon rind.
- Mix well and spread over baked crust.
- Bake at 350u0b0 for about 25 minutes.
- Remove from oven and sift powdered sugar over top.
- Let cool.
- Cut into squares while hot.
- If you choose, you can use the following icing.
