“Asian Fusion” Salad Dressing

  1. Put all ingredients into a glass bowl (I like to use a large, 3-cup glass measuring cup). Heat in the microwave for 35 to 45 seconds, until slightly hot so that the butter can melt.
  2. Taking a fork or a small whisk, vigorously stir all the ingredients together for about two minutes, until all the butter and peanut butter are blended thoroughly.
  3. Set aside, and let cool for 10 to 15 minutes. (While it's cooling, it's the perfect time to chop up the vegetables and other ingredients for the "Asian Fusion" salad-a separate recipe here that pairs up with this salad dressing.)
  4. Just before serving, give the dressing another minute or so of vigorous stirring. The dressing will still be slightly warm, but that's okay. Drizzle liberally on the individual salad bowls, and let guests/family members "stir" their own salads.
  5. Note: if it's too spicy for you the first time, try it again with a bit less curry or cajun spice. If it's too sweet for your taste, try adding a bit more of the spices. It's easy to customize this exactly to your tastes, but this (to me) is the perfect blend. It goes so nicely with the mandarin oranges, bosc pear, red onion, cool cucumber and tangy goat cheese found in the "Asian Fusion" salad.
