Irresistible Vegan Banana Muffins With Sweet Apple Chunks
- 1 Diced Washed Apple (no Need To Peel)
- 2 Ripe Bananas
- 1 cup Wholemeal Flour
- 3/4 cups Rolled Oats
- 6 Tablespoons Extra Virgin Olive Oil
- 8 Tablespoons Low Fat Rice Milk, Coconut Milk, Or Soy Milk
- 1/4 teaspoons Baking Powder
- 1/4 teaspoons Salt
- 2 Tablespoons Maple Syrup Or Brown Sugar
- Preheat oven to 200u0b0C (390u0b0F).
- Wash apple, cut out the core and dice (no need to peel because most of the goodies are in the skin) and throw them into a large mixing bowl. Peel the bananas and mash and mix them with the apple pieces in the bowl.
- Add all the other ingredients and mix well (Kat found it easiest with a big wooden spoon but you can also use a hand mixer, or even just your hands). Fill the muffin tray evenly with the mixture and sprinkle some toppings on top for decoration (if required).
- Bake for 15-20 minutes and enjoy!
