No-Bake Nut & Chocolate Energy Bars
- 1 cup Cashews, Chopped
- 1-1/2 cup Crispy Brown Rice Cereal
- 3/4 cups Old Fashioned Rolled Oats
- 2/3 cups Dates, Pitted And Chopped
- 2/3 cups Unsweetened Shredded Coconut
- 3/4 cups Almond Butter
- 1/4 cups Honey
- 3 Tablespoons Dairy-free Or Vegan Butter (I Like Earth Balance Vegan Buttery Sticks)
- 1-1/2 ounce, weight Dairy-free Chocolate, Dark Or Bittersweet (I Like Enjoy Life Brand)
- Coat an 8-inch square baking pan with nonstick cooking spray (canola or coconut), line with parchment, then spray parchment; set aside.
- In a medium mixing bowl, combine chopped cashews, cereal, oats, dates, and coconut.
- In a small saucepan, stir together almond butter, honey, and dairy-free butter over medium heat until butters melt and mixture is smooth. Pour over the dry ingredients, stir to coat evenly, then press into prepared baking pan. Refrigerate for 2 hours.
- Shortly before removing the pan from the fridge, melt dairy-free chocolate in a microwave-safe bowl in 15-second increments. Stir and repeat until melted and smooth. Once ready, drizzle the chocolate over the granola, then chill the granola in the freezer until the chocolate hardens, about 5 minutes.
- Remove granola from pan and cut into 10 even bars. Store granola bars in a cool place in a covered container for up to 1 week. (I keep mine in the freezer, but it's totally up to you!)
