Peanut Butter Granola
- 8 cups Rolled Oats
- 1-1/2 cup Wheat Germ
- 1-1/2 cup Brown Sugar
- 3 ounces, weight Sweetened Coconut
- 4 ounces, weight Pecan Pieces
- 1/2 cups Water
- 1/2 cups Honey
- 1/2 cups Creamy Peanut Butter
- 1/2 cups Vegetable Oil
- 1 teaspoon Vanilla
- 6 ounces, weight Craisins
- In a very large bowl, mix the oatmeal, wheat germ, brown sugar, coconut and nuts. In a medium saucepan, mix the water, honey, peanut butter, and oil. Bring to a boil and cook for 1 minute. Add the vanilla and then pour over the dry ingredients. Stir until everything is moist and then pour half the mixture onto a baking sheet and spread until in a level layer. Repeat with the remaining mixture on another sheet. Put in a 200 degree oven for 1 hour. Switch the position of the baking sheets and cook for another hour. Remove from the oven and pour into a large airtight container.
- Stir in the craisins at this point. Or you may want to leave them out and add as you eat; the craisins tend to dry out a little and I don't mind, but some may.
