Pineapple Oatmeal Bake
- 20 ounces, weight Canned Pineapple Tidbits, In Their Own Juice. Drain And Reserve Juice.
- 1-1/3 cup Old Fashioned Oatmeal
- 1/2 cups Part-skim Ricotta Cheese
- 2 whole Eggs
- 3/4 cups Reserved Pineapple Juice
- 1 teaspoon Cinnamon
- 1 teaspoon Vanilla
- 1 teaspoon Baking Soda
- 1/2 teaspoons Kosher Salt
- 1/4 cups Splenda Or Sugar
- 1/2 cups Apple Sauce
- Mix together all of the ingredients except for the pineapple bits.
- Spray an 8x8 pan with cooking spray and spread the pineapple on the bottom of the pan. Pour the mix over the pineapple.
- Bake at 350 for 30 to 35 minutes.
- I have also made this using other fruits. My current favorite is canned pears (diced) and the reserved pear juice. You can also incorporate the fruit directly into the mix if you like.
