Sydney Special Slice

  1. Preheat the oven to 180u0b0C (around 350u0b0F).
  2. Melt the butter.
  3. Mix together the cornflakes, coconut, flour, sugar, 2 tablespoons cocoa, baking powder, and salt. Pour the melted butter over, and use your hands to mix well until the mixture is crumbly.
  4. Press into a well-greased baking tray (I use one that measures 26x16cm at the bottom), and bake for 20 minutes.
  5. Mix the icing sugar and remaining 2 tablespoons cocoa together well, being sure to remove any lumps. Add the oil and peppermint essence and mix until it resembles sand. Add milk gradually until you have a spreadable consistency. Spread it on top of the slice while still warm, and top with sprinkles, chopped nuts, or more desiccated coconut.
  6. Slice when cold.
