Sydney Special Slice
- 3-5/8 ounces, weight Butter
- 1-1/2 cup Cornflakes
- 1 cup Desiccated Coconut
- 1 cup Plain Flour
- 1/2 cups Sugar
- 4 Tablespoons Cocoa, Divided
- 1 teaspoon Baking Powder
- 1 pinch Salt
- 1-1/2 cup Icing (powdered) Sugar
- 2 Tablespoons Cocoa
- 1 teaspoon Cooking Oil
- 1 teaspoon Peppermint Essence
- Milk, As Needed For Icing Consistency
- Sprinkles, Chopped Nuts, Or Additional Desiccated Coconut, For Garnish
- Preheat the oven to 180u0b0C (around 350u0b0F).
- Melt the butter.
- Mix together the cornflakes, coconut, flour, sugar, 2 tablespoons cocoa, baking powder, and salt. Pour the melted butter over, and use your hands to mix well until the mixture is crumbly.
- Press into a well-greased baking tray (I use one that measures 26x16cm at the bottom), and bake for 20 minutes.
- Mix the icing sugar and remaining 2 tablespoons cocoa together well, being sure to remove any lumps. Add the oil and peppermint essence and mix until it resembles sand. Add milk gradually until you have a spreadable consistency. Spread it on top of the slice while still warm, and top with sprinkles, chopped nuts, or more desiccated coconut.
- Slice when cold.
