Italian Meatball Soup
- 1 can (14.5 Oz.) Italian Style Diced Tomatoes (with Garlic And Onions)
- 1 can (14 Oz.) Beef Broth
- 2 cups Water
- 2 teaspoons Italian Seasoning
- 1 can (10.75 Oz.) Tomato Soup
- 1 package (10 Oz.) Frozen Italian Style Mixed Vegetables
- 8 ounces, weight Precooked Frozen Meatballs (see Note)
- 1 cup Uncooked Macaroni Noodles
- 1/4 cups Grated Parmesan
- Note: you can substitute your favorite homemade meatballs by cooking them and freezing them ahead of time OR cook them separately and add just before serving.
- Combine tomatoes, broth, water, and Italian seasoning in a large pot. Bring to a boil. Add tomato soup, vegetables, meatballs, and noodles. Bring to a boil again, then reduce heat and simmer, covered, for ten minutes or until meatballs are warmed through and noodles are cooked. Sprinkle parmesan cheese on top and serve.
