Italian Meatball Soup

  1. Note: you can substitute your favorite homemade meatballs by cooking them and freezing them ahead of time OR cook them separately and add just before serving.
  2. Combine tomatoes, broth, water, and Italian seasoning in a large pot. Bring to a boil. Add tomato soup, vegetables, meatballs, and noodles. Bring to a boil again, then reduce heat and simmer, covered, for ten minutes or until meatballs are warmed through and noodles are cooked. Sprinkle parmesan cheese on top and serve.
