Sweet Potato Fritters With Minty Lime Sauce

  1. For the fritters:
  2. Whisk the eggs in a bowl until they become light and fluffy. Peel the skin from the sweet potatoes and place them in the bowl with the eggs. Mix them together. In another bowl, combine flour, cinnamon, cayenne pepper, baking powder, salt and pepper. Fold the flour mixture into the sweet potato mixture until combined.
  3. Heat olive oil in a large pan. Once the olive oil becomes hot, spoon dollops of the sweet potato mixture into the pan and press them down to become thinner. Cook each side until the outside becomes crispy and brown, about 5-7 minutes per side.
  4. For the sauce:
  5. Chop and seed the jalapeno. Place jalapeno, lime juice, and mint sprigs in a food processor and blend until smooth. Pour over fritters right before serving.
