Sweet Potato, Ginger & Coconut Milk Soup
- 1 Tablespoon Olive Oil
- 2 Onions, Sliced
- 1 teaspoon Ground Ginger
- 1 teaspoon Ground Cumin
- 1/2 teaspoons Chili Powder
- 700 grams Sweet Potatoes, Peeled And Diced
- 700 milliliters Vegetable Stock
- 400 milliliters Coconut Milk
- Salt And Pepper, For Seasoning
- 1/4 cups Fresh Coriander
- 1 Tablespoon Lemon Juice
- Place olive oil in a pan over a medium heat. Add onions, ginger, cumin, chilli powder and saute for 5 minutes.
- Stir in sweet potato chunks. Pour in vegetable stock and coconut milk. Bring to the boil and simmer until potatoes are tender, about 15 minutes.
- Season with salt and pepper. Blend until smooth. Stir in coriander and lemon juice.
