Purple Potato Mash Up
- 3 pounds Purple New Potatoes
- 3 cloves Garlic, Diced
- 4 Tablespoons Butter, Cut In Cubes, Plus More For Greasing Dish
- 1 cup Heavy Cream
- 1-1/2 cup Shredded Cheddar Cheese
- 1/2 cups Grated Asiago Cheese
- 1/2 cups Grated Parmesan Cheese
- 1 teaspoon Onion Powder
- 1/2 cups Panko Breadcrumbs
- Start by preheating your oven to 375 F. Grease the sides and bottom of a 9x9 baking dish with butter or non-stick spray. Set aside.
- Since I have never worked with purple potatoes, I didn't know how they reacted with heat. Instead of boiling the potatoes, I steamed them. In a large pot bring a few inches of water to a boil with a large steamer basket or colander in place. Put the potatoes in the basket, cover and steam until tender, about 15-20 minutes or until fork tender.
- Remove the potatoes from the basket into a large mixing bowl. Add your garlic, butter and cream. Mash your potatoes until you reach the consistency you like. Then stir in 2/3 of your cheddar, all of your Asiago and half of your Parmesan cheese. Salt and pepper to taste. Spoon into your prepared baking dish.
- In a small bowl, combine the remaining 1/3 of the cheddar, remaining 1/2 of the Parmesan and your breadcrumbs. Sprinkle over the top of the potatoes and bake for 25 minutes or until the top is golden brown.
- Everyone loves mashed potatoes but imagine my surprise when I found out potatoes came in my favorite color. So many options...so many recipes... I decided to start with my favorite, mashed potatoes. These little purple potatoes are fabulous!
