Mexican Meat Loaf
- 1 1/2 c. finely chopped mushrooms
- 1 medium zucchini, sliced
- 1 medium onion, finely chopped
- 3 Tbsp. red wine or water
- 1/2 c. catsup
- 1/2 c. milk
- 1 tsp. prepared mustard
- 1 egg, beaten
- 1/2 c. seasoned, fine, dry bread crumbs
- 1/4 tsp. salt
- dash of pepper
- 2 tsp. chili powder
- 1/2 tsp. cumin
- 1/4 c. chopped pimentos
- 1/3 c. chopped chilies
- 1 (15 oz.) can whole tomatoes, drained
- 1 lb. ground beef
- 4 oz. grated Cheddar cheese
- bell pepper and pimento for garnish
- In a medium saucepan, combine mushrooms, zucchini, onion, wine or water and 1/4 cup of water.
- Cover and let vegetables steam over medium heat until tender.
- Drain off liquid and add catsup and mustard; set aside.
