Cold Green Bean & Tomato Salad
- 16 ounces, weight Fresh Whole Green Beans, Ends Snipped
- 8 ounces, weight Grape Tomatoes, Halved
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 teaspoon Parsley Flakes
- 1 whole Small Red Onion, Peeled & Thinly Sliced
- 5 ounces, weight Real Bacon Bits
- FOR THE DRESSING:
- 3/4 cups Sour Cream
- 1 whole Lemon, Zest And Juice
- 1 Tablespoon Balsamic Vinegar
- In a pot of boiling water, add whole green beans and cook 3 minutes. Drain and set in a large mixing bowl to cool down. Add tomato halves, salt, pepper, parsley flakes and stir. Add red onion slices and bacon bits, stir or toss together. Cover and refrigerate while you make the dressing.
- In a small bowl, add sour cream, lemon zest and juice, and balsamic vinegar. Stir to mix well. Remove bowl from refrigerator and mix in dressing. Cover and refrigerate until ready to serve.
