Delicious Whole Grain Pancakes

  1. Start by grinding the grains in a blender until they reach a flour consistency, but still with small un-ground bits of grain. Add baking soda, baking powder, and salt, and stir together. Set aside. In a large bowl or stand mixer, mix together the eggs, vanilla, sugar, and milk. Add flour until everything is wet, adding a little more milk if needed.
  2. Butter a griddle and spoon about 6 tablespoons of batter per pancake at a time. You can add nuts (pecans, walnuts, almonds) or fruit and berries (banana slices, blueberries, strawberry slices, peach slices, etc.) if desired. Cook on medium; pancakes are done when golden brown.
  3. Serve with maple syrup, fruit jam, butter or peanut butter.
