Chocolate Chip Zucchini Bread
- 1-1/2 cup All-purpose Flour
- 1/2 teaspoons Baking Soda
- 1/2 teaspoons Baking Powder
- 1/2 teaspoons Salt
- 1 teaspoon Cinnamon
- 1 pinch Nutmeg
- 1 whole Egg
- 1/2 cups Canola Oil
- 1/2 cups Light Brown Sugar, Packed
- 1/2 cups Sugar
- 1/2 cups Plain Greek Yogurt
- 1 teaspoon Vanilla Extract
- 1 cup Zucchini, Shredded
- 1 cup Semi-Sweet Chocolate Chips
- Preheat oven to 350u0b0F. Butter and flour a 9 x 5 loaf pan and set aside.
- In a large bowl, mix together flour, baking soda, baking powder, salt, cinnamon and nutmeg.
- In a separate bowl, whisk together egg, oil, both sugars, Greek yogurt and vanilla extract until combined. Add the wet ingredients to the dry ingredients and fold gently. Do not over-mix. Fold in zucchini and chocolate chips.
- Pour batter into the prepared pan and bake for 40-50 minutes or until a toothpick comes out clean. Remove from the oven and let cool in the pan for 20 minutes.
- Take the loaf out of the pan and allow it to cool completely on a wire rack. Slice bread and serve!
