Fresh Mediterranean Tomato Sauce

  1. Place tomatoes in large bowl, add salt, oregano, parsley, garlic, onions, capers, peppers, 2 tbsp. of lemon juice, pepper, and 4 tbsp. oil.
  2. Stir gently, set aside for 1 hour.
  3. Cook linguini.
  4. Toss hot drained pasta w/ 2 tbsp. lemon juice and again w/ 2 tbsp. oil.
  5. Top each serving with fresh tomato sauce.
