Fresh Mediterranean Tomato Sauce
- 3 c. plum tomatoes, (washed, cored, cut into thin wedges)
- 1 tsp. salt
- 1 - 2 tbsp. fresh oregano
- 1/4 c. minced red onion
- 1/2 c. roasted red pepper, coarsely chopped
- fresh pepper
- 6 tbsp. consorzio oregano oil (3 olive, 3 basil)
- 8 oz. linguini
- 1/2 c. crumbled feta
- 12 green olives, sliced
- 2 tbsp. minced parsley or cilantro
- 2 - 4 cloves garlic, crushed
- 2 tbsp. capers, drained
- 2 tbsp. of lemon juice
- Place tomatoes in large bowl, add salt, oregano, parsley, garlic, onions, capers, peppers, 2 tbsp. of lemon juice, pepper, and 4 tbsp. oil.
- Stir gently, set aside for 1 hour.
- Cook linguini.
- Toss hot drained pasta w/ 2 tbsp. lemon juice and again w/ 2 tbsp. oil.
- Top each serving with fresh tomato sauce.
