Potato Salad With Wasabi Dill Mayo Dressing
- 2 whole Potatoes
- 1 cup Cherry Tomatoes
- 1/2 pieces Red Onion
- 1/2 cups Pitted Black Olives
- 1/4 cups Fresh Dill
- 4 Tablespoons Mayonnaise
- 1 teaspoon Wasabi
- 1 Tablespoon Apple Vinegar
- 3 Tablespoons Olive Oil
- 1 teaspoon Salt
- 1/2 teaspoons Pepper
- 1 bunch Parsley
- Slice your potatoes and next three ingredients.
- In large pot, boil water. Add potatoes and cook until soft. Drain and set aside.
- Mince the dill. Then in a small bowl, mix mayonnaise, wasabi, apple vinegar, olive oil, salt, pepper and fresh dill.
- In large salad bowl, place the cherry tomatoes, red onion, black olives, and cooked potatoes.
- Add dressing into your vegetables and mix well. Roughly chop parsley and add to salad.
