Easy Black Beans Recipe
- 1 Tablespoon Extra Virgin Olive Oil
- 1/2 cups Finely Diced Onion
- 4 cloves Garlic, Minced Or Pressed
- 1/2 teaspoons Cayenne (or Less, To Taste)
- 1 teaspoon Cumin
- 1/4 teaspoons Oregano
- 2 cans (15 Oz. Size) Black Beans, Drained And Rinsed
- 1 cup Chicken Or Vegetable Broth
- 1 Tablespoon Freshly Squeezed Lime Juice
- 1 pinch Finely Minced Cilantro, For Topping
- 1 pinch Shredded Cotija, For Topping
- Heat saucepan over medium heat and add in oil. Add onions and saute for about 5 minutes. Add garlic, cayenne, cumin, and oregano and cook for 30 seconds.
- Stir in black beans and chicken broth. Stirring regularly, bring to simmer and simmer for 10 minutes, or until most of the liquid has evaporated (the beans will thicken more as they cool). Remove from heat and stir in lime juice. Transfer to a serving dish and top with cilantro and cotija.
- Notes:
- Vegetarian? Use vegetable broth, instead of the chicken!
- Vegan? Use vegetable broth and skip the cotija!
