Arizona Chicken
- 1/2 c. margarine
- 6 oz. seasoned stuffing mix
- 1 medium onion, chopped
- 6 to 8 mushrooms, sliced or chopped
- 3 whole chicken breasts or 6 singles
- 1/2 c. sour cream
- 1/2 c. mayonnaise
- 1 can cream of chicken soup
- 1/4 lb. Cheddar cheese
- fresh broccoli
- Melt margarine and saute onion and mushrooms in frying pan. Add seasoned stuffing and stir to mix.
- Mix together sour cream, mayonnaise, cream of chicken soup and shredded cheese in small bowl.
- Cook chicken breast on medium temperature, covered, in microwave for 3 minutes.
- Turn and continue cooking at 2 minute intervals until done.
- Do not overcook, then cut chicken into 1-inch pieces.
- Wash broccoli and cut off top 2 inches.
