Greek Broccoli Skillet Bake
- 1/4 cups Low Sodium Vegetable Stock
- 8 ounces, weight Fresh Broccoli, Rinsed And Drained
- 1 whole Lemon, Zest And Juice
- 1/2 teaspoons Salt
- 1/2 teaspoons Black Pepper
- 1/4 cups Seasoned Bread Crumbs Or Panko
- Olive Oil, For Drizzling
- 1/2 cups Feta Cheese Crumbles
- Preheat oven to 400u0b0F.
- In a 10" skillet (I use a cast iron skillet), add vegetable stock and broccoli spears in a single layer (it's okay if they overlap a bit). Set aside.
- In a bowl, add lemon zest and juice, salt, black pepper, and breadcrumbs or panko, using a spatula to combine. Transfer mixture over the broccoli in the skillet. Drizzle with olive oil, then add feta cheese crumbles across the top.
- Cover with aluminum foil and bake for 15 minutes. Remove foil the remaining 5 minutes of bake time. Serve and enjoy!
