Classic Thumbprint Cookies

  1. Mix softened butter, brown sugar, egg yolks, vanilla and salt until well combined. Add flour and stir to combine.
  2. Roll dough into one-inch balls. Dip balls in slightly beaten egg whites and then roll in finely chopped pecans. Place on parchment-lined cookie sheets about one inch apart.
  3. Bake at 350 degrees for five minutes. Remove cookie sheets from the oven and add a thumbprint with a spoon. Return cookies to the oven and bake for eight minutes longer.
  4. Place cookies on a wire rack to cool. Once cookies have cooled completely, fill print with powdered sugar icing, jam or jelly.
  5. Yields approximately 3 dozen cookies.
  6. Note: the underside of a teaspoon works beautifully for adding the print to the cookie.
