Classic Thumbprint Cookies
- 1 cup Butter, Softened
- 1/2 cups Brown Sugar, Packed
- 2 whole Eggs, Separated
- 1 teaspoon Vanilla
- 1 teaspoon Salt
- 2 cups Flour
- 1-1/2 cup Pecans, Finely Chopped
- Icing, Jam Or Jelly, To Fill The "thumbprint"
- Mix softened butter, brown sugar, egg yolks, vanilla and salt until well combined. Add flour and stir to combine.
- Roll dough into one-inch balls. Dip balls in slightly beaten egg whites and then roll in finely chopped pecans. Place on parchment-lined cookie sheets about one inch apart.
- Bake at 350 degrees for five minutes. Remove cookie sheets from the oven and add a thumbprint with a spoon. Return cookies to the oven and bake for eight minutes longer.
- Place cookies on a wire rack to cool. Once cookies have cooled completely, fill print with powdered sugar icing, jam or jelly.
- Yields approximately 3 dozen cookies.
- Note: the underside of a teaspoon works beautifully for adding the print to the cookie.
