Mango Habanero Margarita

  1. For the habanero-infused simply syrup:
  2. Cook sugar, water, and habanero pepper on low until sugar is dissolved. Remove from heat and let habanero steep for 15 minutes. Strain mixture using a fine sieve into a lidded jar. Store in fridge until ready for use.
  3. For the salt rim:
  4. Mix together chili powder and salt together on a small plate, set aside. Wet rim of glasses (with water or rub a lime wedge along the rim) and then dip rim in chili powder/salt mixture.
  5. Fill the glasses with ice.
  6. For the margarita:
  7. Place thawed mango and habanero simple syrup in a Vitamix or high-powdered blender. Blend until smooth and set aside.
  8. Fill a shaker with a few ice cubes (don't use too many, as margarita ingredients fill shaker most of the way). Pour in mango/simple syrup mixture, tequila, triple sec, and lime juice. Shake until chilled.
  9. Pour into glasses and drink immediately!
