Black Magic Cupcakes

  1. Preheat oven to 350 F. Using a stand mixer stir together flour, sugar, cocoa powder, baking soda, baking powder and salt until well incorporated. Mix in eggs, coffee, oil, vanilla and buttermilk and beat for 1 minute. Batter will be thin.
  2. Pour into 12 paper lined jumbo cupcake cups. Fill each about 2/3 full. Bake for 18-22 minutes until a toothpick inserted in the middle comes out clean.
  3. Cool and frost with your favorite vanilla or chocolate frosting, or check out my chocolate fudge frosting on the related link. It is divine!
  4. Notes:
  5. 1. For a sheet Cake: Pour batter into a greased 9x13 pan and bake 35-40 minutes.
  6. 2. For a layer cake: Pour batter into two greased 9 inch round cake pans and bake for 30-35 minutes.
