Black Magic Cupcakes
- 1-3/4 cup Flour
- 2 cups Sugar
- 3/4 cups Cocoa Powder
- 2 teaspoons Baking Soda
- 1 teaspoon Baking Powder
- 1 teaspoon Salt
- 2 Eggs
- 1 cup Brewed Dark Coffee, Cooled
- 1/2 cups Vegetable Oil
- 1 teaspoon Pure Vanilla Extract
- 1 cup Buttermilk
- Preheat oven to 350 F. Using a stand mixer stir together flour, sugar, cocoa powder, baking soda, baking powder and salt until well incorporated. Mix in eggs, coffee, oil, vanilla and buttermilk and beat for 1 minute. Batter will be thin.
- Pour into 12 paper lined jumbo cupcake cups. Fill each about 2/3 full. Bake for 18-22 minutes until a toothpick inserted in the middle comes out clean.

- Notes:
- 1. For a sheet Cake: Pour batter into a greased 9x13 pan and bake 35-40 minutes.
- 2. For a layer cake: Pour batter into two greased 9 inch round cake pans and bake for 30-35 minutes.
