Crispy Oatmeal Cookies
- 3/4 sticks Butter
- 1 cup Oats
- 1 whole Egg
- 1/4 cups Sugar
- 1 teaspoon Vanilla Bean Paste
- 1 Tablespoon Flour
- 1 teaspoon Baking Powder
- Melted Chocolate, For Dipping (optional)
- Preheat oven to 400u0b0F. Line a baking sheet with parchment paper.
- Melt butter. Add oats and let sit and soak for about 15 minutes.
- Mix egg, sugar and vanilla until white, light and fluffy. Add flour and baking powder.
- Portion out dough onto prepared baking sheet by the teaspoonful, leaving plenty of space in between. No more than 8-9 cookies per sheet! It won't look like much, but just wait and see!
- Bake for 8-10 minutes. Cool down completely and store in an airtight container, or dip in melted chocolate and then store in an airtight container.
- Enjoy-again, and again, and again.
