Cranberry-Walnut-Oatmeal Cookies
- 1/2 cups Applesauce
- 1/2 cups Brown Sugar
- 1/2 cups White Sugar
- 1 whole Egg
- 1 teaspoon Vanilla Sugar Or Extract
- 1 teaspoon Ground Cinnamon
- 1 cup Flour
- 1 cup Oats
- 1/2 cups Chopped Walnuts
- 1/2 cups Chopped Dried Cranberries
- Cream applesauce and sugars together. Add egg, vanilla and cinnamon. Sift flour and stir in, along with the oats.
- Mix well, then add nuts and fruit. Batter should be rather thick and sticky.
- Drop by the spoonful onto a greased baking sheet and bake at 350u0b0F for 15 - 20 minutes, depending on the size of the cookies. Do not overbake! Cookies should be still be soft when you remove them from the oven, but they'll set.
- Depending on size, this makes about 20 - 25 servings.
