Crispy Chocolate Cherry Energy Bar Recipe
- 1/2 cups Chocolate Crisp Rice Cereal
- 1/4 cups Quick Cooking Rolled Oats
- 1/4 cups Chocolate Whey Protein Powder
- 1/8 teaspoons Fine Sea Salt
- 2 Tablespoons Almond Butter
- 1 Tablespoon Honey
- 2 Tablespoons Unsweetened Almond Milk
- 2 Tablespoons Unsweetened Dried Cherries, Chopped
- 1 Tablespoon Dark Chocolate Chunks
- Mix rice cereal, oats, whey protein powder, and sea salt together in a medium-sized bowl. Add almond butter and honey, then slowly stir in almond milk and mix until you get a sticky sort of dough.
- Stir in cherries and chocolate chips, then spray a large piece of parchment paper with a little coconut oil and press the dough onto it. Use the parchment paper to flatten the dough so that it's in a fairly rectangular shape (remember, this will determine how thick your bars are).
- Stick the dough in the refrigerator for 1 hour or so (or put it in the freezer for 10-15 minutes). Once dough is chilled, cut it into 4 bars. Wrap individually in foil for easy grab-and-go bars.
- Eat chilled!
