Tuna Pie
- 2 pkg. cheese crackers
- 1 tin (8 oz.) tuna, drained
- 4 eggs
- 1 small onion, chopped
- 2 c. milk
- 1 c. grated cheese
- 1/4 c. chopped parsley
- 3 Tbsp. margarine, melted
- Crush crackers, reserving 1 cup for topping.
- Mix melted margarine into remainder of crushed crackers; mix well.
- Press this into a medium sized pie dish, ensuring that you cover the sides of the pie dish as well as the bottom.
- Refrigerate the dish so as the base can set before adding the filling.
- Fry onion and parsley for a few minutes.
- Beat together eggs and milk, then add the tuna, cheese, onion and parsley, stirring well to blend.
- Pour mixture into pie dish.
- Sprinkle reserved crackers over the top. Bake at 350u0b0F, 180u0b0C for approximately 1 hour until golden brown. Serve cool with salad.
