Strawberry Peach Crisp
- FOR THE FRUIT FILLING:
- 4 cups Frozen Unsweetened Peaches
- 2 Tablespoons Sugar Free Strawberry Jam
- 2 Tablespoons Sugar Free Tapioca Pudding Mix (powdered Mix)
- 2 Tablespoons Truvia (or Whatever Sugar Substitute You Cook With)
- FOR THE TOPPING:
- 2/3 cups Quick Cooking Oats
- 2 Tablespoons Flour
- 2 Tablespoons Brown Sugar
- 1/2 teaspoons Cinnamon
- 2 Tablespoons Butter, At Room Temperature
- Preheat oven to 350 F. Spray an 8x8 baking dish with cooking spray.
- For the fruit filling:
- In a large bowl combine frozen peaches, strawberry jam, tapioca pudding and Truvia (sugar substitute). Place the fruit mixture into the prepared baking dish.
- For the topping:
- In a medium bowl stir together oats, flour, brown sugar (or brown sugar substitute) and cinnamon. Using a pastry blender cut the butter into the mixture until it is crumbly. Sprinkle this evenly over the fruit mixture.
- Bake at 350 F for 45 minutes or until fruit mixture bubbles around the edges. Remove from oven and serve warm with your favorite sugar-free whipped topping, frozen yogurt or vanilla ice cream!
- Makes 6 servings.
