Oatmeal Butterscotch Bars
- 1 cup Butter Or Margarine
- 3/4 cups Brown Sugar
- 1/4 cups Granulated Sugar
- 1 teaspoon Vanilla
- 2 whole Eggs
- 3 cups Quick Cooking Oats
- 1-1/2 cup All-purpose Flour
- 1 package (3.4 Oz. Box) Instant Butterscotch Pudding Mix
- 1 teaspoon Baking Soda
- 1 cup Butterscotch Or White Chips
- 1. Preheat oven to 375 degrees.
- 2. Lightly grease a 9x13 baking dish and set aside.
- 3. In a large mixing bowl, cream butter and sugars. Add vanilla and eggs; beat well. Combine the oats, flour, dry pudding mix and baking soda; gradually add to the creamed mixture. Stir in butterscotch or white chocolate chips (dough will be stiff).
- 4.Pat dough into the baking dish and bake in the preheated oven for 20-25 minutes, or until golden brown. Once cooled, cut into bars.
