Oatmeal Butterscotch Bars

  1. 1. Preheat oven to 375 degrees.
  2. 2. Lightly grease a 9x13 baking dish and set aside.
  3. 3. In a large mixing bowl, cream butter and sugars. Add vanilla and eggs; beat well. Combine the oats, flour, dry pudding mix and baking soda; gradually add to the creamed mixture. Stir in butterscotch or white chocolate chips (dough will be stiff).
  4. 4.Pat dough into the baking dish and bake in the preheated oven for 20-25 minutes, or until golden brown. Once cooled, cut into bars.
