Chipotle Roasted Cauliflower
- 1/4 cups Olive Oil
- 2 teaspoons Chipotle Peppers In Adobo Sauce, Canned
- 1/2 teaspoons Garlic Powder
- 1/2 teaspoons Onion Powder
- 1/2 teaspoons Dried Oregano
- 1/2 teaspoons Salt
- 1/4 teaspoons Black Pepper
- 1/4 teaspoons Ground Cumin
- 1 head (large) Cauliflower, Separated Into Bite-sized Florets
- 1/2 Lime, Juiced
- Fresh Cilantro, Chopped (optional)
- Preheat oven to 425u0b0F.
- In a large bowl, mix together olive oil, chipotle sauce, garlic powder, onion powder, oregano, salt, pepper and cumin. Add cauliflower to bowl and toss in mixture until each piece is coated.
- Place coated cauliflower on a large baking sheet and spread out so pieces aren't touching. Roast for 15 minutes. Turn cauliflower over, return to oven and roast an additional 10-15 minutes.
- Sprinkle lime juice over roasted cauliflower and add cilantro, if desired. Toss well and enjoy! Can be served hot or at room temperature.
