Crispy Cajun French Fries With Maple Mustard Sauce
- 6 whole Potatoes
- 1 cup Milk
- 1 cup Wheat Flour
- 1 teaspoon Cayenne Pepper (adjust To Your Taste)
- 1 teaspoon Salt (more Or Less)
- Maple Mustard Sauce (see Recipe Below)
- 1 cup Oil (I Use Canola)

- FOR THE MAPLE MUSTARD SAUCE:
- 1/8 cups Yellow Mustard
- 1/8 cups Whole Grain Mustard
- 1/8 cups Plain Yogurt Or Mayonnaise, To Add Creaminess
- 1 teaspoon Maple Syrup, Or More To Taste
- 1. Heat oil to 375 degrees in a deep fryer or in a skillet over medium-high heat. (If the fries are not super crisp, turn the heat up just a little.)
- 2. Slice washed and unpeeled potatoes into strips.
- 3. Coat potatoes with milk.
- 4. Add cayenne to the flour and then drop your potatoes into the cayenne-seasoned flour.
- 5. Drop battered potatoes in oil and cook until light brown on both sides.
- 6. Sprinkle with salt or more cayenne (if you're brave enough).
- FYI: You can use any flour, but the wheat flour truly does nothing different for the taste or texture, so don't be afraid to use it. Plus, it adds a nice golden color.
- MAPLE MUSTARD SAUCE:
- The basic mustard sauce recipe is 2 parts of yellow and whole grain mustard (1 part each), 1 part plain yogurt or mayonnaise, and maple syrup to taste. Simply mix ingredients together until smooth. Adjust the amounts to your liking.
